- POTATO AND CHEESE OMELET WITH TURKEY AND BROCCOLI

INGREDIENTS

¼ cup From the Farm™ Thick Cut potatoes

1 Tbsp butter

2 large eggs, beaten

¼ cup small broccoli florets

¼ cup turkey, chopped

¼ cup Swiss cheese

1 pinch each salt and ground pepper, to taste

DIRECTIONS

1.

Add From the Farm™ Thick Cut potatoes and butter to a non - stick frying pan or skillet and cook over medium heat until golden brown.

2. Add beaten eggs and continue to cook.

3. Warm broccoli and turkey in the microwave for about 1 minute.

4. Add broccoli, turkey and cheese to omelet before folding.

5. Season with salt and pepper before serving.

Ón2. - TOMATO PASTA

INGREDIENTS

1 splash extra virgin olive oil

1 onion, chopped

1 heads garlic, peeled

1 28 oz can of whole tomatoes

1 5 ½ oz can of tomato paste

1 cup red wine

1 Tbsp oregano

1 - 2 bay leaves

½ tsp salt

1 454 g box of farfalle or any pasta

1 16 oz box of baby spinach

DIRECTIONS

1.

Add a splash of olive oil to a large saucepan over medium heat.

Toss in the onion and garlic and sauté just to heat through, a minute or two.

Pile in the tomatoes, paste, wine, oregano, bay leaves and salt.

Bring to a simmer and slowly cook until all the flavours blend and deepen, about 20 minutes.

2. While the sauce is bubbling away, cook the pasta in lots of salty boiling water.

Drain.

3. Fold the sauce and the spinach into the cooked pasta, stirring and allowing the heat to wilt the spinach.

Serve and share.
